Marble Restaurant Expands To Cape Town. Chef and restaurateur David Higgs has announced that Marble Restaurant is expanding to Cape Town next year, the restaurant will be situated at the Waterfront.

Marble is a celebration of quintessential South African fare and cooking on fire Marble embodies South Africans’ love of cooking with fire, a quality that makes their food culture different from the rest of the world” David Higgs. Situated in Keyes Art Mile, the growing art and food hub of Rosebank, Marble Restaurant boasts a grand wood-fired grill, imported from Grill Works situated in Michigan, as the focal point of the restaurant. The concept combines the open-fire trend seen internationally with an added dose of good South African flair.

David Higgs told Food and Home that Marble is about an experience, the restaurant makes sure that everything is based around great relationships and excellent service. The company’s team understands the role that it plays in this sensory experience. He also said that the cocktail bar is the first touchpoint for Marble’s patrons as mixology has become an important part of the dining experience due to its experimental nature.

Higgs stated that opening Marble was the most difficult experience of his life as trying to control the live fire and temperatures were a problem. However he remained persistent and he was able to tame the beast and get the fire under control to create the award-winning restaurant that is Marble.
